My biggest cake of the year was this one.
The venue was a really cool space that once housed the original Rainier Brewery boiler room. an old building with the tallest ceilings, floor to ceiling windows and the best light. In an area of town that has recently had a rebirth of cool, Georgetown, once was only known for the Boeing field and the industrial section of Seattle.
The cakes: Lemon on top, Tiramisu in the middle and the beloved Coconut on the bottom.
The Tiramisu was a new one for me. I used alternate layers of vanilla and chocolate cakes, each doused with an espresso and Kahlua soak. The filling was a lightly sweetened Mascarpone and Cream. I wanted to really saturate the layers, but I also wanted to keep the cake in cake form and not a mushy mess. so, I hope it was a success.
